RASPBERRIES
Peak season:  July
Health benefits: 1 cup of raspberries has only 61 calories
and more than 6 grams of fiber. Raspberries also contain
vitamins C and A, fiber and calcium.

Look for plump, dry, and vibrant-colored berries.
(Colors available: cranberry, black, white or golden)

Eat raspberries within 2 days of purchase.  Do not wash
berries until ready to use.  

Defrost frozen raspberries by immersing the bag in cold
water for about 10 minutes.
Raspberry Spread                             Makes 1 cup

1/2 cup sugar                 In small pan over medium-
1/2 cup water                high heat, bring sugar &
1 cup raspberries,          water to a boil. Stir in
fresh or frozen,             raspberries; turn heat to
thawed                          medium-low. Cook 30-40
                              minutes, until of desired
thickness. Use immediately or freeze.
TASTY TIDBIT: Raspberries can usually be
substituted for other berries, though raspberries are
more delicate.

Raspberry Vinegar

Place 1/2 cup raspberries in a clean jar. Pour in
enough white vinegar to cover. Cover jar and let
stand at room temperature at least 1 week
before using. Use in any recipe calling for
fruit-flavored vinegar.
